Curd Brinjal (Dahi wale Baingan)

3 Long Brinjal
1 cup curd
5-6 clove Garlic
1/4 tsp Haldi powder
1/2 tsp Red chilli powder (or a per your taste)
1/2 tsp Coriender powder

1/2 tsp Amchur powder (0r as per your taste)
salt as per taste
5-6 curry leave
cumin seed for tadka
2 tsp oil.
Chopped coriander leaves for garnishing.



First wash long brinjal and cut it in round shape in water (cutting brinjal in water will not make the brijal black).
Now in a mixture jar put roughly cut 5-6 garlic, 1/2 tsp red chilli powder, 1/4 tsp haldi powder, 1/2 tsp coriander powder, 1/2 tsp amchur powder , salt as per your taste and little oil. Grind this mixture well.
Now take out the brinjal from water. Put the brinjal in bowl and mix the past in it.
Gentle mix the masala and brinjal, now keep the mixture aside for 10 mins.
After 10 mins take a pan put oil and shallow fry brinjal mixture one by one. after all brinjal get shallow fry keep the masala fried brinjal aside.
Now in a pan put 2 tsp oil, add cumin seed and curry leave. Side by side in a bowl stir the curd well and add little salt in it.
Now pour the curd in the pan at low flame.
After 7-8 mins add masala brinjal in the pan and keep the flam at low. After 10 mins , off the flame and garnish the curd brinjal with coriander leaves.
You can have this dish with Roti, Paratha and Rice.
